Garlic and Herb Lamb Chops
Simple and tasty grilled lamb chops with just three ingredients.

- 8 Thick-Cut Lamb chops I used loin chops from Costco but thick cut rib chops or even a rack would be fine
- Olive oil
- Dr. BBQ's Garlic & Herb Rub
Prepare your grill to cook direct over medium high heat
Brush the chops lightly on all sides with olive oil
Season the chops liberally on all sides with Dr. BBQ's Garlic & Herb Rub
Place the chops on the grill and cook until golden brown on the bottom, about 3 to 4 minutes
Flip the chops and cook until the second side is golden brown, about another 3 to 4 minutes
If the chops are thick enough flip to the side and cook for another couple of minutes until golden brown
Move the chops to a cooler spot on the grill and cook, flipping often until they reach an internal temperature of 145°
Remove to a platter and tent loosely with foilRest for 5 minutes and then serve two chops to each guest
