Garlic and Herb Lamb Chops

Simple and tasty grilled lamb chops with just three ingredients.

  • 8 Thick-Cut Lamb chops I used loin chops from Costco but thick cut rib chops or even a rack would be fine
  • Olive oil
  • Dr. BBQ's Garlic & Herb Rub


  • Prepare your grill to cook direct over medium high heat
  • Brush the chops lightly on all sides with olive oil
  • Season the chops liberally on all sides with Dr. BBQ's Garlic & Herb Rub
  • Place the chops on the grill and cook until golden brown on the bottom, about 3 to 4 minutes
  • Flip the chops and cook until the second side is golden brown, about another 3 to 4 minutes
  • If the chops are thick enough flip to the side and cook for another couple of minutes until golden brown
  • Move the chops to a cooler spot on the grill and cook, flipping often until they reach an internal temperature of 145°
  • Remove to a platter and tent loosely with foil
    Rest for 5 minutes and then serve two chops to each guest
